How to marry in UAE, if groom is muslim resident and bride christian non-resident?

I am a muslim with UAE residency and my fiancee is european christian. How do we get married? Dubai courts require her father to come give her away or sign the documents. We dont wish to go through Dubai courts. Is there no way to marry at an embassy of our country and have UAE attest the marriage?
